For most products, the calculation considers components viewed as increasing risk: energy, saturated fat, sodium and total sugars. It balances those against components viewed as decreasing risk: protein, fibre, and fruit, vegetable, nut and legume content. The result is converted into the displayed star rating.
Why the rating and serving size answer different questions

How to read that example
On the standardised comparison shown on the fictional packets, Cereal A has more displayed stars than Cereal B. That does not mean its declared serve contains fewer kilojoules. Cereal A’s 45 g serve works out to 675 kJ, while Cereal B’s larger 60 g serve works out to 720 kJ.
If someone served two declared serves, the illustrative totals would be 1,350 kJ for Cereal A and 1,440 kJ for Cereal B. Again, those are serving calculations, not HSR results.
The practical lesson is to use both pieces of information for their intended jobs. The stars provide a quick, standardised comparison between similar packaged products. What a high rating does not tell you

The rating is based on the components included in the HSR calculation.
